Refrigerator No-Bake Cookies







I absolutely LOVE these cookies!  They are so easy to make and when I say "no bake", I mean you literally don't even have to turn on the stove!  With a few simple ingredients you can have HEALTHY, delicious cookies in no time. 

What makes these cookies different from traditional no-bake cookies?

These cookies don't require the use of melted butter.  To keep these low-fat, I needed to find a what to have the right amount of wet ingredients with out adding tons of additional fat.  That's where the honey and water come in.  Honey provides both moisture content and is the only sweetener in this recipe. When it comes to peanut butter I use a low-fat powdered version.   Since I have fat-digestion issues, I opt for the powdered low-fat kind.  



Do I need special equipment to make this recipe?

No.  A mixing bowl, spoon and a few measuring cups is all that is needed.  I have used my stand mixer before, but I don't recommend that because it is too powerful and will break the oats down too much.


Are this really a no-cook recipe?

Yes.  Because there is no butter to melt or granulated sugar to break down, this recipe is truly a no-cook recipe.

What are the ingredients?

Quick oats-the main base of the recipe and adds lots of fiber.
Ground flax seed-binding ingredient, adds protein and fiber.
Peanut butter powder-binding ingredient, adds protein.
Cocoa powder-adds flavor.
Salt-enhances sweetness and adds flavor.
Honey-the only source of sweetness for this recipe.
Water-provides moisture and binding of ingredients

How do I make this recipe?

1. In a large bowl, combine the peanut butter powder, flax seed, salt and cocoa powder and whisk to combine.  
2. Stir in the honey.  
3. Next, stir in the oats and water, alternately. Mix well after each addition.  
4. Using a spoon or small scoop, drop the mixture onto a parchment paper lined baking sheet. Use your hand or the bottom of a small glass to flatten the cookies slightly.  
5. Chill for several hours.




How do I store these cookies?

These cookies need to be stored in an air-tight container in the refrigerator.  They will last 7-14 days.  

What is the result of this recipe?

A soft, chewy no bake cookie!  For best results, immediately after making these they need to be refrigerated for at least four to six hours, 12-24 hours is even better, to allow the oats time to soften and the flavors to blend.  The longer they are refrigerated the better they get.

INGREDIENTS

  • 3 cups quick oats

  • 1tbsp. flax seed

  • 1 cup powdered peanut butter

  • 1/2 cup cocoa powder

  • 1/8 tsp. salt

  • 1 cup honey

  • 1 cup water


INSTRUCTIONS

  1. In a large bowl, combine the peanut butter powder, flax seed, salt and cocoa powder and whisk to combine.  

  2. Stir in the honey.  

  3. Next, stir in the oats and water, alternately. Mix well after each addition.  

  4. Using a spoon or small scoop, drop the mixture onto a parchment paper lined baking sheet. Use your hand or the bottom of a small glass to flatten the cookies slightly.  

  5. Chill for several hours.

NOTES --------------------------------------------------------------------------------

I have made this using my stand mixer in the past and I don't recommend mixing this recipe with that method.  The power of the stand mixer disintegrates the oats so the cookies don't retain the same texture of the classic no-bake cookies.  I highly recommend mixing this recipe by hand.  It does get very stiff and thick, but adding the ingredients a little at a time and mixing well after each addition will help get everything thoroughly mixed. I use a small cookie scoop to get an even shape and size.  These cookies can be eaten right away, but they are best when chill for several hours and even better after 12-24 hours.
