Flourless Edible Chocolate Chip Cookie Dough



Who says you can't have cookie dough for breakfast?!?!?

Or lunch or dinner or for a snack I love cookies, cookie dough, you know all the things!  This cookie dough is not only safe to eat it is high in protein, packing a whopping 13 grams to help keep you full longer.  And unlike other edible cookie dough recipes on the internet, this one is low-fat.

Why do I need to make this cookie dough for eating instead of regular cookie dough?

It's been said that flour and eggs can potentially contain harmful bacteria that can make you sick.  We don't want that!  This recipe is safe to eat because it doesn't contain either of those ingredients. Raw flour needs to heat treated in the oven to kill any potential harmful bacteria before it is considered safe for consumption.  And if I'm going to go to all that trouble, I might as well bake actual cookies right? Now, that being said, I have eaten raw cookie dough, cake batter and all kinds of other unbaked goodies with raw flour and eggs and haven't died yet, so there's that. But now that I know there are better, healthier option that I can eat for breakfast, lunch or dinner?  SIGN ME UP!!!

Do I need any special or weird ingredients to make this recipe?

NO!  I wanted to make sure that this recipe had ingredients that were commonly known, don't taste weird and readily available in the grocery stores and/or online.  Probably the only thing that most people don't already have in their pantry is the almond protein powder.  I buy in my local Walmart on the peanut butter isle.  But you can also find it online at varies places like Amazon.


How can this recipe have such a smooth and creamy taste WITHOUT flour?

ALMOND PROTIEN POWEDER!!!!! When I was experimenting with different ingredients for this recipe I tried several different bases before I settled on almond protein powder.  Oat flour was just too gritty,  and quick oat that I use for my cookie dough protein bars needs time to absorb the liquids to produce a cookie dough texture, and that usually takes several hours, making them not a good option for an "eat it now" recipe.  Then I remembered I had some Barney's Almond Butter Powder in my cabinet and that was just the right ingredient!  It produces a smooth, creamy texture that you are familiar with. I love this almond powder because it doesn't contain any weird ingredients.  It's just simply made from blanched almonds.

Can I actually bake cookies with this dough?

No.  This recipe is for eating only.  Traditional cookie doughs contain eggs and other ingredients that make them suitable for baking.  

What are the ingredients?

Barney's Almond Butter Powder-This is the base of the recipe and replaces traditional flours.
Salt-Enhances the sweetness.

Sam's Choice Creamy Almond Butter-Provides a small amount of additional healthy fat, as well as adding color to the dough that makes it look authentic.
Raw honey-Provides the base sweetness in the recipe.
Vanilla extract-adds additional flavor.
Organic maple syrup-balances out the flavor of the honey so it's not so dominant and provides a richer flavor similar to brown sugar.
Semi-sweet mini chocolate chips-the key ingredient that makes this recipe live up to its name.
Water-provides the additional moisture needed to bind the recipe together without a lot of additional fat.


How to make the edible cookie dough

Combine all the ingredients together-There is no special order or instructions here other than to place all the ingredients into a bowl, mix thoroughly and eat it!


Storing the edible cookie dough

If you are making a single serving then you are probably planning to eat this right away.  But just in case you are not, or you are making a larger portion, you can store this in a covered container in the refrigerator for up to five day.  If you're like me though, it won't last that long because you will eating it all before then!

  • 1/4 cup Barney's Almond Butter Powder

  • 1/8 tsp. salt

  • 1 tsp. Sam's Choice Creamy Almond Butter

  • 1 tbsp. raw honey

  • 1 tsp. vanilla extract

  • 2 tsp. organic maple syrup

  • 1 tsp. semi-sweet mini chocolate chips

  • 2 tsp. water

INSTRUCTIONS


  1. Combine all ingredients in a small bowl. Mix thoroughly.  Serve.
