Gluten-Free Banana Chocolate Chip Muffins



Are there any weird or hard to find ingredients in this recipe?

Nope!  I try to make sure all of my recipes contain only ingredients that you can easily find in grocery stores or through online shopping.

Do I need any special gluten-free flours or flour blends?

Nope!  Once again I like to keep my gluten-free recipes as simple as possible.  While I do have a recipe for a gluten-free flour blend, you won't need that for this one.  The main flour is oat flour.  I buy oats in bulk and make my own oat flour by grinding the oats in my blender until it's a fine powder.  Super easy!

How easy is this recipe to make?

This recipe is a super quick to make!  You don't need any fancy equipement.  Just a bowl, whisk and spoon or spatula.  It takes just a few minutes to whip up the batter and start baking muffins!

Is this recipe dairy-free?

It can be!  I use margarine for the fat which is dairy-free, but you can use any plant-based butter or oil spread that you'd like.  And if you aren't dairy free you can use real butter if you'd like.

What are the ingredients?
Oat flour-Used as the base of the recipes.

Raw honey-used in place of traditional sweeteners/sugars.
Mashed bananas-adds sweetness and flavor.
Eggs-aids in emulsification and rising, binding agent.
Margarine-adds moisture and fat
Baking powder-enhances the sweet flavors.
Baking Soda-adds additional flavor.
Vanilla-add additional flavor.
Salt-brings out the sweetness & adds additional flavor.
Cinnamon-adds additional flavor.
Water-provides moisture.
Chocolate Chips-optional, but adds variety.
Nuts/seeds-optional, but adds variety


How do I make this recipe?

Combine honey, mashed bananas, eggs and margarine.  Whish together until smooth. Add cinnamon, baking powder, baking soda, and vanilla.  Whisk again.  Stir in oat flour and water alternately, whisking/stirring well after each addition.  Stir in nuts/seeds and chocolate chips.  Spoon into greased muffin tins.  Bake at 350° for 30 minutes.  Cool on wire rack.  


How do I store this recipe?

Store in air-tight container.  Refrigerate after a few days to prevent molding.

What's the final consistency of these muffins when they are baked?

These muffins are VERY moist and soft!  They are not gummy or crumbly at all!  You would never know they are gluten-free!What are the results of this recipe?

INGREDIENTS


  • 5 cups finely ground oat flour

  • 1/2 tsp. salt

  • 1 tsp. baking powder

  • 1 tsp. baking soda

  • 1 tsp. cinnamon

  • 1 cup raw honey

  • 3 medium ripe bananas, mashed

  • 2 whole eggs

  • 1/3 cup margarine

  • 1 cup water

  • 1 cup semi-sweet mini chocolate chips, optional

  • 1/2 cup nuts or seeds, optional

INSTRUCTIONS


  1. Combine honey, mashed bananas, eggs and margarine.  Whish together until smooth. 

  2. Add cinnamon, baking powder, baking soda, and vanilla.  Whisk again.  

  3. Stir in oat flour and water alternately, whisking/stirring well after each addition.  

  4. Stir in nuts/seeds and chocolate chips.  

  5. Spoon into greased muffin tins.
