No-Cook Chocolate Date Pudding







Why dates are the base of this pudding

I have always been a fan of ANYTHING chocolate.  When I made diet changes a few years ago my need for low-fat foods that limited dairy and refined sugars eliminated a lot of choices for me.  Sure I could use prepackaged convenience foods, but most of the time those are a ladened with chemicals and preservatives.  So, when I discovered that dates have a very rich, smooth consistency when blended I got the idea to experiment and this pudding was one of my first creations!

What are the benefits of eating dates?

There are many different kinds of dates and over the years I have become very fond of Medjool varieties.  They are known for being soft, chewy,  and sweet.  But, did you know they are packed with fiber, potassium and magnesium?  There are so many benefits to consuming dates.  Fiber and magnesium help with proper bowel function.  Like bananas, dates contain a considerable amount of potassium which supports the function of the nervous system. Dates can also be used as a natural sweetener in many recipes.  And suprisingly, date puree' can be used as a fat replacer in baked goods. 







How easy is this recipe to make?

This recipe has just the right amount of sweetness, creaminess and chocolate flavor.  It's super fast and easy to make and hard to resist not eating the whole blender cup full in one sitting!  The longest process in making this no-cook pudding is waiting for the date to get soft during the soaking process.  After that, it's easy-peasy chocolate pudding.

Is this pudding dairy-free?

Yes!  This pudding is naturally dairy-free on it's own.  If you choose to top it with chocolate chips be sure to use dairy-free chips if you need that option.

What's the best way to ensure a smooth and creamy texture?

I have tried using my Ninja food processor and blender containers.  Both of these blend the soaked dates, but didn't give a silky smooth texture.  I found that the BEST way to get that creamy, silky texture was to use my personal blender cup attachment for my Ninja blender system.

Cocoa powder-give the pudding a rich chocolate flavor.
Tapioca starch-thickens the pudding.
Pure maple syrup-adds additional sweetness.
Salt-enhances the sweet flavors.
Vanilla extract-adds additional flavor.

How do I make this pudding?

Prep the dates-soak the date in boiling water until the water is cool and the dates are soft.
Combine all ingredients-Place all ingredients in the food process (or in my case blender cup) and process until smooth and creamy.

How do I store this pudding?

This pudding can be stored in a covered container in the refrigerator for up to seven days.

What are the results of this recipe?

If made as written, including using a high powered blender, this recipe results in a silky smooth and decadent chocolate pudding.


CHOCOLATE DATE PUDDING

Just the right amount of sweetness, creaminess and chocolate flavor.

INGREDIENTS


  • 20 Medjool dates, approx. 2 cups

  • 2 ½  tbsp. Cocoa powder

  • 1 tbsp. Tapioca or cornstarch

  • 1 tbsp. Pure maple syrup

  • Dash of salt

  • 1 cup of water

  • 1 tsp. Vanilla extract


INSTRUCTIONS


  1. In a bowl, cover the dates with boiling water and soak until the water is cold and the dates are soft.  Reserve one cup of the soaking water.  

  2. Remove the pits from the dates.  

  3. In a blender or food processor combine all ingredients. 

  4. Blend until smooth and creamy.  Scoop into serving dishes and chill until cold before serving.
