Basic Gluten-Free Pizza Crust





Going gluten-free doesn't mean that you have to give up your favorite foods!  Friday nights is pizza night at my house and we haven't ordered a commercial pizza in YEARS!  When I went gluten-free five years ago and was diagnosed with multiple digestive issues including a fat intolerance I had no choice but to learn to cook differently.  

Pizza is one of those foods that we love, but unless the crust is right, it just turns out yucky.  I have made many gluten-free pizzas where the crust was too soggy, too wet, too dry, didn't rise or just didn't taste like pizza crust.  

What is the secret to making a soft, gluten-free crust that isn't wet or gummy?

I learned that a good flour blend and liquid to flour ratio is the key to successful gluten-free pizza and gluten-free baking.

Is this crust vegan?

This crust is naturally dairy-free and vegan.  If you want your toppings that way as well just swap out the dairy cheese for your favorite vegan alternative.


Do I need any special equipment to make this crust?

Technically, no.  You can mix this recipe by hand.  But for best results I recommend using a stand mixer to achieve the BEST results. I use a Cuisinart Precision Master stand mixer with the paddle attachment, but you could use a hand mixer.

What are the ingredients?

My gluten-free flour blend-contains the right blend and ratio of gluten-free ingredients to give this crust the right consistency.
Active dry yeast-enables the crust to rise properly.
Sugar-aids in "feeding" the yeast for proper rising.
Salt-adds flavor.
Olive oil-adds flavor and provides additional moisture for crust softness.
Water-warm water is necessary for proper rising and adds enough moisture for dough consistency.

How do I make this crust?

Pre heat oven to 425°.

Combine all ingredients-Add my gluten-free flour blend, yeast, salt, sugar, olive oil and water to into your stand mixer bowl. 
Mix thoroughly-Mix on medium speed for three minutes until the mixture is very this and smooth.  It will look like thick cake batter.  
Place the batter on a pizza pan-Spread batter out onto a greased round of parchment paper.  With wet hands, gently press and shape outer edge to form outer crust shape.  Let rise for 30 minutes.
Pre-bake the crust-Pre-bake crust for just ONE minute.  Remove from the oven.  
Add your favorites-Top with sauce and desired toppings.  
Fully cook the pizza-Place the pizza back into the oven and bake at 425° for 25 minutes.


How do I store this crust?

Once pre-baked, this crust can be used immediately or frozen for later use.  To freeze it, wrap the pre-baked crust in aluminum foil or parchment paper and store in freezer for up to six months.

What are the results of this recipe?

The crust is firm and not too dry or wet, but if is also soft enough to fold together as well. This recipe is so fast and easy to make you can even throw one together for a quick lunch or after school snacks and watch your kids smile from ear to ear!





Fast And Easy Basic Gluten-Free Vegan Dairy-Free Pizza Crust

Soft, crispy, chewy texture.  Just what you'd expect from a pizza crust.


Prep Time: 35 -mins

Cook Time: 25 mins

Total Time: 1 hr, 5 mins

Makes: 4 servings


INGREDIENTS

      

Crust

  • 230g Denise's Perfect Gluten Free Flour Blend 

  • 2 tsp. active dry yeast 

  • 1 tsp. Salt 

  • 1 tsp. Sugar 

  • 1 cup plus 1 tbsp. Warm water 

  • 1 tbsp. Olive oil 

Sauce


  • 1/2 a can (2oz.) of tomato paste 

  • 1/2 cup water 

  • 1/4 tsp. Each basil and oregano 

  • 1/2 tsp. Salt 

  • 1/2 tsp. Sugar 

INSTRUCTIONS


  1. Blend all crust ingredients in a stand mixer. 

  2. Spread batter out onto a greased round of parchment paper.  With wet hands, gently press and shape the outer edge to form the outer crust shape. 

  3. Let rise for 30 minutes.  Preheat the oven to 425°. 

  4. Pre- bake the crust for just ONE minute.  Remove from the oven. 

  5. Top with sauce and desired toppings.  Bake at  425° for 25 minutes.

I use a stand mixer with the paddle attachment, but you could use a hand mixer. Once the dough is mixed it will look like thick cake batter. This recipe is naturally vegan.  If you want your toppings vegan as well, like the cheese, simply use your favorite vegan alternatives.
